The Architect’s Bread Saw | Ergonomic African Mahogany Artisan Knife
The Story & Inspiration
I spent 50 years as an architect turned full-time professional woodworker, designing and building high-end furniture and built-ins. After retiring, I dove into another passion and opened a micro-bakery, selling sourdough bread at local farmers' markets.
.A year ago, I bought one of those mass-market "bow" bread knives out of pure curiosity. As a baker, I found it frustrating. It was awkward to hold, restricted to right-handed users, and couldn't handle a tall, rustic loaf. As a designer and woodworker, I knew it was a flawed design. I set out to engineer the ultimate bread knife—one specifically designed to slice a tall sourdough boule completely in half, cut paper-thin slices, and effortlessly glide through a hard artisan crust and soft crumb without ever crushing the loaf.
The Craftsmanship & Design: This knife is the culmination of architecture, woodworking, and baking physics.
The Ergonomics: New mass-market bows force you to twist your wrist 90 degrees. This handle is ergonomically aligned to your natural slicing motion. It is fully ambidextrous right out of the box.The Blade & Tension: Built to handle maximum loaf height and thickness. It features a premium, ultra-sharp saw blade housed in a custom tensioning system. As one of my recent reviewers noted: "It is an elegant design: very simple, with an easy option to keep the sawblade on the correct tension!"
The Finish: Hand-shaped from gorgeous African Mahogany, featuring a striking luster and interlocking grain. It is sanded to a silky texture and sealed with an all-natural, completely food-safe blend of mineral oil and beeswax.
Specifications and Materials: Premium African Mahogany and a high-carbon stainless steel blade.
Max Cutting Height: Comfortably clears tall artisan loaves up to 6 inches high.
Handedness: Ambidextrous (perfect for both right and left-handed bakers).
Finishing: Food-safe mineral oil and beeswax (easy to maintain over time).
Shipping: Shipped securely in protective packaging, fully insured.

Selling since January 2026
I retired a few years ago, but being that I love woodworking, I am still working. Most of my work is custom, one of a kind. So some of the items I am showing here are for reference only, to show the range of materials and styles that I enjoy building. They range from economical to high end. Currently, I am doing only furniture and small projects. I love design, I am a retired architect, but started doing custom woodworking 25 years ago and can't give it up. If you see something you like and wish to discuss a project, contact me and we can work together to choose style, materials, details, budget, shipping etc.
